The summer is winding down and with it comes an abundance of herbs and vegetables and fruits. This is when harvesting becomes a full-time job and when the extras you worked so hard for over summer begin to look like way too much.
I bring my berry mint and spearmint in over the winter and keep it growing inside, but I cut it way back before doing so. That means harvesting a nutty amount of mint! While I’ve made a bunch of coffee ice cubes for some delicious peppermint mochas, I still had tons of mint left. So, I dried some up, perfect for peppermint tea!
Step 1. Cut off bunches of mint with sharp scissors or pruning shears.
Step 2. Wash your mint. Even if it’s in your garden, it may still have some dirt and dust on it.
Step 3. Tie twine around the stems and hang up somewhere that doesn’t get a lot of sunlight. I have some on a door handle on my hall closet, some was hanging in my clothing closet, and I just installed a drawer pull that was laying around to be my designated drying zone. It hangs on the back of my cabinet away from the sun, making it the perfect drying spot.
Step 4. Let dry for about a week, or until your leaves look nice and crispy.
Step 5. Take leaves off of stem and chop into small pieces. This is my favourite part as the scent from the leaves fill the air.
Add to jar and enjoy a pepperminty tea whenever you need a cup of warmth!
